3/4 c. ground beef1 1/2 c. pinto or black beans, drained
1/2 tsp. chili powder
1/4 tsp. salt
1/8 tsp. pepper
1/2 c. salsa
1 tbl. lime juice
1 1/2 c. shredded lettuce
1/2 c. chopped avocado
1 small chopped tomato
1/4 c. red onion strips
baked tortilla strips
In skillet, brown beef over medium heat, drain well and return to pan. Add beans, chili powder, salt, and pepper; cook for 1 minute. Stir in 1/4 c. salsa and heat through. Mix together remaining salsa and lime juice, set aside. Divide lettuce into four portions. Add meat mixture, avocado, tomato, red onion, and salsa with lime on top of the beds of lettuce. Finish by topping each salad with a handful of tortilla strips.
